Gouda Grilled Chicken Sandwiches

Step 1: Add the olive oil, Dijon mustard, honey, lemon juice, garlic powder, onion powder, dried parsley, smoked paprika, salt and pepper to a bowl. Whisk until combined.
Step 2: Pour the marinade over the chicken and refrigerate for at least 15 minutes and up to 24 hours.
Step 3: To prepare the hot honey, combine the honey and Calabrian chilies spread and mix until blended. Set aside.
Step 4: Preheat the grill to 200°C (400°F).
Step 5: Grill the chicken for 4 to 5 minutes per side with the lid closed.
Step 6: During the final minute of cooking, top each piece of chicken with shredded Gouda and Smoked Gouda. Close the grill lid and allow the cheese to melt.
Step 7: Place the grilled chicken on the buns and top with lettuce, tomato and thinly sliced red onion.
Step 8: Drizzle generously with the prepared hot honey and serve.
IGA Tip
For the easiest grilling, choose boneless, skinless chicken breasts and pound them to an even thickness. Shredding the Gouda before adding it to the chicken also helps the cheese melt quickly and evenly.
