Step 1: Preheat the oven to 450°F. Line a sheet pan with parchment paper or lightly oil the pan.
Step 2: Using a vegetable peeler, shave the yam or sweet potato into thin, ribbon-like slices.
Step 3: Spread the ribbons evenly in a single layer on the prepared sheet pan.
Step 4: Season with salt, black pepper, nutmeg, cinnamon and minced garlic. Toss gently to coat.
Step 5: Scatter the cubed butter evenly over the yam ribbons, allowing it to melt into caramelized pockets as the yams roast.
Step 6: Roast for approximately 30 minutes, tossing halfway through.
Step 7: For crispier edges, continue roasting for up to 45 minutes.
Step 8: Garnish with additional sage and adjust the salt and pepper before serving.
